CHILI MUSHROOM

    # INGREDIENTS:

    1. Button mushrooms 400 grams cut into halves lengthwise.
    2. Capsicum 1 cut into cubes
    3. Onion 1 cut into cubes
    4. Corn flour 3tbsp
    5. Refined flour 3tbsp
    6. Garlic 2tbsp chopped
    7. Green chili 2 nos. sliced
    8. Dark soy sauce 2tsp
    9. Vinegar 1/2tsp
    10. Chili garlic sauce 2tsp
    11. White pepper powder 1tsp
    12. Sugar 1/2 tsp

    # METHOD:

    Serving Size: 3-4

    Clean the mushrooms and boil them for 30 seconds only. Drain the mushrooms and transfer them in a bowl. 

    Add corn flour and refined flour to the mushrooms. Mix well to coat the mushrooms.
    Meanwhile heat oil in a pan before coating the mushrooms. 

    Deep fry the mushrooms for a few minutes until they hold the coating. Transfer them to a sieve.

    Heat a wok and add oil. Stir fry garlic, onions, capsicum and green chilies over high heat for a minute.

    Then add all the sauces, sugar, salt and white pepper powder. Add 1/2 cup water. Bring to a boil.

    Once the sauce thickens lower the flame and deep fry the mushrooms for the second time till they turn golden brown and crispy.

    Immediately add the fried mushrooms into the sauce and coat them with the sauce. I did not add salt as the sauces already have salt in them.

    Serve with rice noodles.
