This Tomato soup recipe is one of the most delicious tomato soups we have ever made, it is simple and rich is earthy flavors.
Ingredients
2 x Fresh leaks (cut in three) and wash well
8 x Mini bell peppers (cut in quarters)
4 x Pints mini tomato’s (cut in half)
Olive oil
Crushed pepper
Crushed salt
Italian herbs
Pre-heat oven at 425F on Broil
– Turn the veg over every few minutes
Place 3 Pint of water (3/4 Gallon) into pot to boil
– add 3 tablespoons of vegetable broth (powder)
– add 5 Basil sprigs into the boiling water
– add all the roasted veg and the liquid
bring all ingredients to a boil and then simmer on low/ medium for 30 minutes
Take pot off heat and blend the ingredients, taste and add salt/ pepper if needed.

Looks great. What benefits are there of using cherry tomatoes vs larger tomatoes? (Or even 50/50?)
