I have done all that.. Started back in 1998. When I get lazy, I just bake my wings in the oven at 400f for maybe an hour, pending their size. I'd flip them half way through. They were decent. For the last 10 years or so and I have more time, I'll simmer them in my seasoned water. It really plumps them up. Once they simmer for about 8 minutes, I'll pull them out to dry a little bit. Next it gets fried, pulled and seasoned again, then sauced. I also make my own blue cheese and wing sauce. One of my favorite foods on the planet.
Try frying for 20 min at 220 deg and rest them for an hour then raise the temp slowly refry at 375 deg till golden brown . supper extra crispy

When I feel like doing something special my absolute favorite way to do wings is smoke them for an hour and then deep fry them. The slight smokey flavor pairs well with buffalo sauce in my opinion and I haven't found any other style of wing that comes close. But if I'm going to do every day wings I've found that the Alton Brown method is the best. You steam the wings instead of boiling them and then either roast them in an oven at 450 degrees or deep fry them if you're not concerned about the healthy factor (my preferred style).
I wonder if you could put the wings in the oil cold and then bring then up to frying temp with the oil, seems like I've seen this done with fries

Please next time when you cut any type of poultry use a plastic cutting board so the juices don't run into the wood you can have bacteria grow because you cannot get in between the grains of the wood

Personally I get plenty of compliments on a much simpler method. No need to break them apart. Just toss them in some Montreal seasoning, pop them on the grill, and put a nice sauce on them.
I love when restaurants offer the option for wings to be twice baked or whatever. I prefer them extra crispy so it’s always my preferred way to order.

Toss raw wings in baking power and spices, then air fry. Life, better.
I live in a very small apartment and so have extremely limited storage space. I have no room for a deep fryer or an air fryer to be able to make things. But when I made wings I did bake them in the oven and they turned out fantastic. The trick is to bake them on a rack similar to a cooling rack, but one that is oven safe. I had learned that not all cooling racks are oven safe, so you have to do some research and find one that is. The rack lets air circulate all around the wing, thus letting the skin get crispy. you can also use those racks to cook bacon in the oven, and it keeps it out of the grease and lets it too get crispy.
I'm concerned that like she chose a video idea that has ran into the ground by almost every food channel. And typically they do it better by explaining the science while providing a recipe that is useful and much more knowledgeable.

Those wings look delicious. I'm going to try these using the boil and deep fry method. To get them even more crispy after boiling try tossing the wings in a cornstarch slurry made of oil and cornstarch rather than oil and water and then deep fry them up. I've been using this oil/cornstarch slurry method for years and they turn out awesome all the time.
