Creamy Basil Butter Beans

  1. ###Ingredients

    * 2 tbsp olive oil
    * 2 garlic cloves
    * 1/2 lemon, juice + zest
    * 3 cups (540 g) cooked white beans
    * 1 cup cooking water (or vegetable broth)
    * 2 tbsp almond butter (or tahini)
    * salt & pepper

    **Basil pesto**

    * 60 g basil
    * 3 tbsp pine nuts (or sunflower seeds, walnuts etc.)
    * 1 garlic clove
    * 1/2 lemon, juice + zest
    * 2 tbsp nutritional yeast
    * 1/3 cup (80 ml) olive oil (or less)
    * salt

    ###Instructions

    1. For the pesto blanch the basil for 15 seconds. Immediately place in an ice bath and squeeze out the water. Blend all ingredients, gradually adding more olive oil to get your desired consistency.
    1. For the beans sauté garlic and lemon zest in a little olive oil for 1-2 minutes. (Be careful not to burn the garlic!)
    1. Add in your beans together with a cup of the cooking liquid or vegetable broth. Let it simmer until reduced.
    1. Add the almond butter and season with salt and pepper to taste.
    1. Serve with the pesto and enjoy with some bread or however you prefer!
