What happened to my peaches? Are they still safe to eat?
I canned these peaches in late summer. And I went to grab a jar to make cobbler and now they look like this? They’re still completely sealed. This was my first attempt at canning. Water bath canning. I followed a ball recipe.

The peaches in the top of the jar are kind of discolored and darker. And they look kind of stringy.

Which packing method yave you used?
I found they keep nicer when hot packing them. The texture is also better.

Looks like oxidation. Liquid level in that jar is low.
