So – I grabbed 2 packages of beef bones – each about 3 lbs and I don’t want to waste 2 lbs – can I use all 6 lbs and just adjust the recipe?
So:
6 lbs of beef bones
12 cups water
1.5 onion
1.5 carrot
1-2 celery
Etc?
So kind of 1.5 of the recipe? Does that work?

I make a lot of beef broth but I freeze it. Anyway, I would highly, highly, recommend adding tomato paste to the bones and roasting them on 425 for about 30 minutes until the tomato paste starts to turn black. And then start at step 1. It adds a ton of good flavor
