Today we make our famous homemade tomato soup recipe with all natural and fresh ingredients from our garden! This tutorial video includes step by step instructions on how to make the homemade tomato soup and how to can it. It is healthy, delicious and easy to make. Recipe:
-4 cups Chopped and puréed tomatoes.
-1 sliced onion.
-4 cloves garlic, minced.
-2 cups chicken broth.
-2 tablespoon butter.
-2 tablespoon flour.
-1 teaspoon salt.
-2 teaspoons Sugar or honey.
Directions:
-Wash tomatoes, remove core, cut up and purée in a food processor. Also purée the onions.
-Combine onion, tomatoes, chicken stock, basil and garlic in a pot.
-Boil 20 minutes.
-Remove seeds and skins by pouring through a mesh colander with a pot underneath, or use a food mill.
-Make a roux with butter and flour, cook 1 minute.
-Gradually add the soup to the roux.
-Add sugar and salt.
-Serve and enjoy!
To can it:
-Add citric acid to jars (1/4t. Pints, 1/2t. Quarts).
-Pour soup into sterile jars.
-Pressure can both quarts and pints at 10 pounds pressure for 15 minutes (adjust for elevation).
-If you do not want to pressure can- use tomato paste as a thickening agent instead of the butter and flour roux. Then water-bath can quarts for 40 minutes and pints for 35.
-Done!

Very bad advice. You cannot pressure can anything with a dairy product in it, let alone flour also. If you’re going to can the soup, do it without roux. Can it with just the tomato base and then add the roux when you’re ready to eat it. Never pressure can anything with butter, milk, cream or flour in it !!!!
