My first time canning fish, second time canning any meat. I lightly smoked it first… it’s delicious! All I have is a 15# weight, and all the fish canning recipes call for a 10#. The extension service can’t tell me if there will be a problem, but only send me recipes again saying 10#. I’m a neophyte to canning and any advice would be extremely helpful. Thanks!
