Hey all, just wanted to post something i’ve been really enjoying. It’s been 3 months since i’ve been on this diet, and it’s been quite a journey. It’s been fun cooking with foods i’ve never had before. In this recipe, a mix of farro and chickpeas make up the base for the vegetables. The vegetables used vary depending on that i have on hand.
Basic recipe:
In large skillet/wok over medium/medium high heat, all a good amt of evoo ~1/4 cup, then add in vegetables in order of preference. i start with carrots, then after a few minutes, add onions, a few minutes more add green beans, mushrooms, bell peppers, jalapeños. After these cook down some, add in tomatoes, garlic, chickpeas, pre cooked farro. For spices, i change it up depending on flavor profile i’m wanting. this batch was salt/ black pepper, aleppo pepper, harissa seasoning, spicy kimchi, za’atar, and a little low sodium soy sauce.
Love making a big batch and having this throughout the week, sometimes by itself in a bowl, in a wrap, in an omelet, alongside a garden salad.
3 months ago, this wouldn’t have been anything i would think or want to eat. i was sad when this diet was ‘prescribed’ to me. Not anymore.
