1 pound salted cod approximately 500 grams, soaked
5-6 tablespoons extra virgin olive oil plus more for drizzling
4 tablespoons lemon juice
2 celery stalks thinly sliced
⅓ cup Italian flat-leaf parsley fresh, finely chopped
1-2 garlic cloves minced or grated, depending on size and taste
