I made bulgur for the first time last night, way too much for two, so I had leftovers to test as a salad for lunch. I loved both – as a warm side dish and as a cold salad. The texture is a bit crunchy and didn’t get soggy. Also, it’s tasty and super quick to cook. Totally impressed!

Salad: bulgur, green beans, beets, sliced almonds, feta and a dash of EVOO + apple vinegar
