I have a cold. I wanted to make a soup. I wanted some salmon. I wanted a solid serving of veggies. So I improvised. New learning: one of my local grocery stores sells salmon scraps. I hadn’t noticed it before, but it was half price for the deli scraps. There were various sizes, so I think great for a salad or a bowl. The “scraps” were great for a soup.

– the broth was a base of onions, fresh serrano chiles, ginger, and garlic softened in some avocado oil. Then topped with veggie broth concentrate, red miso, soy sauce and water. And a bit of salt.
– I cooked the some whole grain udon noodles that were a blend of buckwheat and brown rice first in the pot and set aside.
– I chopped some carrots and chard, these cooked quickly in the hot broth and I added the noodles back to the broth
– I cooked the salmon in the air fryer for five minutes with a quick marinade in red miso, ginger powder, garlic powder, and hot honey. This was a yummy marinade but a lot washed away in the broth. I’ll just cook simply next time.
– at serving time I added a squeeze of half a lime for vitamin c

The results was a light yet filling and sinus clearing soup.
