This super easy casserole recipe is the perfect weeknight dinner and it’s so, SO DELICIOUS!!

Chicken Broccoli Rice Casserole

6 boneless skinless chicken thighs
salt and pepper to taste
1/2 t poultry season
2 T oil
3 T butter
1 small onion chopped
2 cloves garlic chopped
3 cups fresh broccoli chopped
1 1/2 cups rice (I used jasmine)
1/2 t thyme
1/2 t oregano
1/2 t garlic powder
1/2 t onion powder
3 cups chicken broth
1 t worchestershire sauce
1/2 c whole milk
1 c heavy cream
3 c shredded cheddar cheese

Welcome back to my kitchen if you are new here my name is Christine today I want to take you back and show you how I made this super easy super delicious creamy cheesy chicken broccoli and rice casserole dish it’s super simple it’s all done in this one pan it’s a family

Favorite in our house I think you guys are going to love it too come with me let’s get started for today’s recipe I am using boneless skinless chicken thighs I wash them and trim them up and I’m just going to season them to get things started salt and Pepper and I’m also going to put a little bit of poultry seasoning in here and I’m drizzling in a little bit of oil and I’m just going to toss this together just to get all the seasoning all over the chicken I am going to cover this and

While this is hanging out in the refrigerator I can move on to the next step okay so while I was waiting for the chicken to get seasoned and had it in the refrigerator I got everything prepped so I have some broccoli onions garlic butter we’re going to be needing

Rice chicken stock I have some seasonings here and I didn’t grate up the cheese yet but I’m going to need to grate up the cheese as well as the garlic as always the full written recipe will be down below in the description box so you don’t have to worry about any

Exact measurements I will have everything for you but let’s head over to the stove this is going to come together super quickly my Skillet is nice and hot I’m just going to put in a little bit more oil I have a little bit in the chicken Already beautiful I’m just going to let those cool off for a little bit before I chop them up I like this recipe because there’s always something to do while the chicken is getting seasoned up I can get everything prepped while the chicken is cooling I

Can move on to this step and make get the rice going this is an easy week night dinner and it’s just so good all the onions the rice this pan is a little bit big for what I’m making today but my other one I just thought was too small and

Going to be too crowded so I went with this one here are the seasonings I’m also adding in a few crushed red pepper flakes optional of course everything’s optional next I’m adding in the chicken broth or chicken stock whatever you prefer I’m turning the heat down to low and

Getting this covered for 10 minutes just like you’re cooking rice but I’m not going the full time with it because we are going to be adding in the chicken and the broccoli and everything else so you don’t want to cook your rice all the way so just about 10 minutes okay it’s

Been 10 minutes it should look like this now I’m going in with the chicken that I chopped up the garlic and all of the broccoli I’m using a lot of broccoli if you’ve seen any of my videos you know I love vegetables so I always use more than a recipe calls

For I’m also adding in I would have done this earlier but I forgot a little bit of Wester sh maybe not quite a tablespoon I’m going to give that a stir in a second maybe a teaspoon or so this is a mixture of whole milk and

Heavy cream I need to turn my heat up a little bit some cheese this a Stir I’m adding in more of my cream mixture okay I’m just going to get this covered and cook it for another five minutes and then I’m going to come in and top it with some more cheese of course and we will give it a little taste test lid back on see you in

Five okay my five minutes are up so I am going to just come in and sprinkle the rest of my cheese on the top this is the point where you would put this in the oven if you really wanted to get crazy but I’m just going to let it melt just like this

I going to cut the heat and that is it dinner is ready how easy was that wow really good the rice is cooked perfectly the broccoli also cooked perfectly I really hate when I overcook my broccoli and it gets mushy this is perfect the 10 minute Mark with the rice

And then the five more minutes after you add in the chicken and the broccoli is perfect I cannot say enough about this recipe I love a really good chicken broccoli rice casserole meal this is my go-to it is the best method and way to make this that I have found yet and the
