My wife is canning for the first time. She made this mixed berry jam. She followed all directions and when she took them out of the boiling water she noticed the separation inside of the jars. Does this seem okay? She is worried she didn’t do it right.
The next step, if it is right, is to let it set/cool for 24 hours.

How long did she cook the jam for? The jam is safe to eat if a tested canning recipe was followed, but the separation is likely due to the jam not being cooked long enough, to activate pectin & evaporate water. Even if directions were followed this can be a little tricky so I like do a gel test, where you freeze a small plate or something like that and drop a little hot jelly or jam onto it. If it firms up instead of running down the plate then you’re golden. The jam may have a syrupy texture but I’m sure will still be delicious!
