Hot Dog Soup to use up leftovers. Everything in this was either odds and ends or a pantry staple we keep on hand.

This isn’t a recipe because it varies depending on what needs to get used up but this batch has:

Diced hot dogs, about a cup and a half (All Beef from Sam’s Club).

Diced red pepper and onion (both were a day or two away from going bad)

A cup of cooked,leftover jasmine rice

A can of tomato soup

A can of pinto beans

Seasonings that we already had in the cabinet

Topped with Monterey cheese.

    Hell yeah! And here I am eating hot dogs mixed in with Hormel chilli…like a sucker!😏

    My father made this when I was a kid especially when soup was 5 cans for a dollar (50 years ago). It generally involved frozen mixed veggies, a few potatos and an onion. He would make a batch of this for the 5 kids and it was awesome. He could stretch a package of 8 hot dogs for the whole family and this was so good that I didn’t know we were poor.
