I love pumpkin, but I really don’t like having to peel it. This roasted pumpkin soup has no peeling or chopping! Just roast on a tray, scoop out the flesh and blend! So simple.

Easy simple gorgeous pumpkin soup you take a whole but enough pumpkin and instead of peeling it we just chop it in half great thing about this soup recipe no fussing no peeling so just simply have the onion and one whole head of garlic we’ll deal with all the skins and things laid outs
Drizzle all the little yummy pieces with olive oil a little bit of salt a few twists of pepper and then that’s simply off to the oven you can see how by roasting the pumpkin and the onions they’ve taken on a lovely deep golden color this just adds a whole extra level
Of yumminess all you need to do is scoop it out that beautiful soft flesh pop it into a saucepan so much easier than peeling pumpkin one of my least favorite jobs in the kitchen you can roughly chop it if you like but I’m gonna let the
Blender do all of the work then to add the garlic to the soup I just take off the loose bits it’s not so pretty but you just squeeze it in I know it looks like a lot of garlic but once you roast garlic it becomes really nice and smooth
And sweet and mellow chicken stock and some water just to balance out the saltiness of stalwart chicken stock I’ll just pop that over the heat if the blend until it’s nice and smooth that’s all it takes pumpkin soup just got a whole lot easier yet a whole lot tastier

we call it a butternut squash here in the uk (although it is part of the pumpkin family)…. one of my fave vegatables!

i blend the pumpkin with the peel on, its edible and gets so soft after roasting !!!
