I would brown the mushrooms first before adding the rest of the veg. I also usually like the beef sliced into thinner strips.
And if you’re making it at home, I wouldn’t chuck your sour cream straight in the skillet or you run the risk of it separating. Scoop out a bit of the warm broth and stir the sour cream into that to temper it and then add back to the pot.
