I’m confident in my food choices because I’ve been following this diet for sometime. Forgive that my bare feet are showing I’m about to go back to the office-

One of my easiest quick meals is pre washed spinach, half a pear, sunflower seeds, a STRONG CHEESE (I used blue cheese- I use just a touch,) and heavy handed with the EEVO. I’m someone that has to be intentional about consuming enough EEVO. I also use whole grain flavored breadcrumbs (I get PLENTY OF GRAINS.) For variety sometimes I’ll mix the oil with whole grain mustard, or a vinegar, I swap the sunflower seeds for walnuts or pecans, I’ll swap the pairs for apples, any berries or grapes and I also mix up the leafy greens. This meal also works well with hummus on it with a variety of beans, vegetables and it’s a great way to use more herbs- or mixing in whole grains. I also forgot to take a picture. My salads are actually about twice a size I eat a lot of vegetables.

For those new I followed this recipe for snacks in my early days too. Changing my pallet was definitely worthwhile and looking back. I really overcomplicated my recipes. I falsely held on to this idea that the websites that boasted complex recipes were the authority on this diet. Today I love that the MD is like I am. Some days it’s lazy.

    been eating an almost identical salad the last week for quick meals during a chaotic holiday. MD always feels abundant to me – more veggies, more fruit, more EVOO, more nuts, seeds, grains.
