Hello and welcome to another episode my name is Manny and this is grony today I’ll be showing you how to make the alkaline version of a very delicious and very popular Greek dish known as musaka not that people live in the alkaline lifestyle don’t eat any more products
And they eat from a very strict list of ingredients due to that I’ll be making some to traditional substitutions so if you’re Greek please bear with me the first alkaline ingredient I’ll be using is a butternut squash in most cases this can be used as a substitution for
Potatoes we’re going to start by peeling half a butternut squash I’m using half because that’s enough for me you can use more or less depending on how many people you’re serving once you’re done slice your button or squash into slabs your butternut squash slices should be
About a/ qu to half an inch thick if you’re like me and your rist are as rigid as cooked noodles and you miss the mark don’t sweat the technique just keep going when you’re done slicing your button on squash should look something like this remember you can adjust the
Quantity to suit your needs let’s set these aside for now and move on over here we have some Chote squashes chotes are another very good alkaline potato substitutes these used to be very rare and difficult to find but now you can find them in almost any store slice your ities into thick slices
Without peeling them you can peel them if you want but our advice against that just wash them and you should be good as for the seeds if you want to you can remove them I used to remove them but really there’s no need they’re edible but if you don’t feel comfortable eating
The seeds just remove them place your charity slices in a container and repeat the Process hey if you’re enjoying this video so far please hit the like button it really helps the channel thank you next up we have some zucchinis these aren’t really substitutes they’re actually used in some of the traditional recipes traditionally eggplant is a primary ingredient in this recipe but
Since most alkaline vegans don’t eat them I’ll skip them all together if you want to you can slice off the top and the bottom of your zucchini and when you’re done you can slice them lengthwise into thick slabs be careful and watch your fingers you can also

Done slicing you can move on to the next step the next step is to prep of your squashes for roasting some people fry them but I prefer to roast them to make it easier for you all I’ll be roasting them separately pour your sliced zucchini into a large
Bowl add some sea salt and adjust the taste next add a couple tablespoons of avocado oil and give it a good mix to make sure everything is properly Coated add your oil zucchini to a baking Pan now all you have to do is spread them apart to make sure a majority of them are touching the surface finally we’re going to bake at 360° f for 30 to 40 minutes let’s move on to our butter not Squatch slices adjust the quantity to meet your
Needs into the same large bowl I’m going to add my butternut squash slices then I’m going to add some sea salt to taste next I’m going to add a couple tablespoons of avocado oil then give it a good mix to make sure everything is properly Coated add your oiled butternut squash to a baking tray and spread them apart to make sure they’re all touching the surface also bake these in the oven at 360° f for 30 to 40 minutes our zucchini slices are done They look really tasty but don’t eat them you need all of them next we’re going to prep our chot slices these will be handled a little differently add your chot slices to the same Bowl add some sea salt and adjust the taste then add a couple tablespoons
Of avocado oil toss it around to make sure everything is cook It add your charity slices to a baking pan spread them apart and bake them at 360° fhe for 50 to 60 Minutes the butter and squash is Done here’s what the chy slices look Like since we have a lot go ahead and taste one and you’ll be shocked let’s make our ground beef replacement you can use some King oyster or King trumpet mushrooms lay your Mushroom on its side and cut it into smaller cylindrical pieces set them aside for now slice some large bter Bell mushrooms
Into smaller pieces and when you’re done you can set them aside I cut my mushrooms into smaller pieces so they can fit into my food processor add your Kinga mushroom pieces into a processor and give it a couple Pulses you don’t want your mushroom slices to be too tiny because they will still shrink after cooking once you’ve broken down your mushrooms add them to a large bowl you want them to look something like this next we’re going to do the same thing with our B Bellow
Mushrooms pour them over your king oyer mushroom pieces using my hands I’m going to give this a thorough mix when you taste this you’ll be making your ground beef replacement using this method going Forward next I’ll grab a handful of my ground mushrooms and I’ll give it a really good squeeze over a strainer placed on a bowl squeeze out as much water as you can get out then place your mushrooms back in a separate Bowl I’ve told you from the earlier
Stages of this channel mushroom stock will always be one of your best plant-based stocks anyway once you’ve squeezed out most of the water from your mushrooms you can proceed to the Next Step which is cooking It place a large cast iron pan on a stove set to medium high heat once your pan is hot go ahead and add your shredded mushrooms spread your mushrooms around so they can cook evenly while cooking you notice a lot of steam that’s okay it’s just a remaining water
Evaporating let this cook undisturbed for 5 minutes while that’s cooking you can go ahead and blend blend some fresh or dried basil some plum tomatoes and an onion if you want to you can also use some Alkaline approved starbo tomato sauce back to the mushrooms give it a
Good mix and let it cook undisturbed for another 5 minutes repeat the process one more time and it should be good in total you want to let it cook for about 15 minutes you could go more if you want after 15 minutes go ahead and add about
1/4 cup of avocado oil then give it a good Mix add about 1 and 1/2 to two cups of your tomato Sauce mix it all together while scraping any stock on bits of mushrooms from the bottom of the pan my ground beef replacement recipe is a really good recipe and I’ve used it a couple times and it never failed me anyway it’s time to add our herbs and spices and you can
Add and remove anything you want to suit your taste we’re going to be starting with some dried oregano add about 1 tbsp next you want to add 1/4 tasp of Salon cinnamon this is optional but you can go ahead and add 1/4 teaspoon of ground cloves for a little bit more boost in
The onion flavor I’m adding 1 tbsp of granulated onions add some sea salt and adjust the taste next you want to add about 2 tbsp of ground coriander seeds this is optional but you can add some Cen Pepper for here add a tablesp of winter savory if you
Can’t find it just skip it add 1/4 tasp of dried dill then finally add a teaspoon of dried Thyme add about 1/4 cup of your mushroom stock then give it a good mix all right you can go ahead and turn your stove down to medium Heat let this cook for about 15 minutes while stirring occasionally after 15 15 minutes go ahead and taste it make final adjustments and take it off the Stove we’re not done yet this is goet Greek food we’re cooking here we’re going to make our bashal sauce this is a heavy cheese-like sauce made from flour place a sauce pan on medium heat to the sauce span you want to add about half a cup of avocado oil some people use
Butter or ghee but alkaline vegans don’t eat either of those things once your oil is hot go ahead and add 2 cups of an alkaline improved flour I know it shows one cup but I adjusted it to two cups later on immediately start whisking it together vigorously be
Careful so you don’t scal yourself but once it starts to come together you can go ahead and add two cups of milk a little at a time whatever you do don’t stop whisking if you have someone to help you go ahead and ask for help once you’ve slowly Incorporated all of your
Milk while whisking your sauce should begin to look very smooth people Liv in the alkaline lifestyle don’t eat eggs so I’m replacing eggs with chickpea water add one cup of chickpea water and some sea salt to taste then keep whisking vigorously keep whisking until you get a silky smooth
Sauce you want it to be a little runny and to look something like this traditionally it should be free of lumps mine has a couple lumps but that’s okay into your ground beef replacement you want to add about half a cup of your bashal sauce once you’re done give it a really
Good mix to combine this will further thicken the ground meat replacement check out how thick our ground meat replacement is set this aside for Now in a baking dish you want to add your roasted chy slices as your first layer lay them flat and don’t be too greedy about it over here I have an 11 by2 stone we baking dish you can go ahead and add more to cover the gaps at the bottom but
This was good enough for me our second layer is going to be our roasted butternut squash slices add the butternut squash slices over the top of your chy slices again you can add a little bit more our third layer will be our roasted zucchini slices once you’ve placed all of your
Zucchini slices over the top go ahead and add your ground beef Replacement now with this one I’m going to be very Generous after adding huge scoops of your meat replacement and being careful not to top it off to the brim use a spatula to flatten it out remember you still need some space for the next and final ingredient flatten it out to the best of your ability then we can go ahead and
Add our bashal sauce You Can Dance while adding your bachal sauce because all of your hard work is about to pay off using a clean spatula carefully spread out your bashal sauce cheese is usually added to the bashal sauce but alkaline vegans don’t eat cheese trust me this is
Still extremely delicious without the cheese now we’re going to bake this at 360° F height for about an hour here you go the top has rages because of the lack of traditional ingredients but trust me pay no mind to it go ahead and cut yourself a massive
Portion and yes it’s supposed to be gooey and not hard like a pie crust dig out that massive slice using a serving spatula at this point I’ll tell you to eat as much as you can before your family members come around because this will be gone in a jiffy beautiful
OMG everything I’ve experienced in my life leading to this point has been totally worth it take a good look because if you don’t make this this will be your last time seeing it it’s steamy gooey flavorful and packed with layers of alkaline goodness garnish with some
Sliced fresh basil and dig in I like the words to tell you how delicious this dish is believe every single good thing you’ve heard about it it’s extremely delicious so delicious that I had to make another one the next day however this time around I let it go
A little longer so the crust could darken a little bit did it make any difference not so much I only did it for the Skeptics in the comment section yep I did don’t laugh at me I see you laughing all right let’s go into it and
See what it looks like if you want to get the same dark cross all you have to do is let it broil for about 3 to 5 minutes after baking you have to keep an ey on it because if you walk away you’d lose everything this time around I served myself a Titanic

Guess what! I accidentally used amaranth that I had ground into a flour (my labelling is not on par yet) Anyways, I used that and in gave that darker look. It tasted fantastic and I am going to try with white kamut. I have some berries.
Really thought it would give that bitter taste I don't like when making porridge. Amaranth is certainly useful in savoury dishes.
