I followed the USDA pickled beets instructions for my first canning project. I had 1/2 inch headspace when I canned them. Now the pickle juice is below the beets. Is this going to be safe to eat?

The part above the brine will soften over time but they are safe to store and eat assuming you followed the recipe and processing time correctly.
