I wanted to test out a 48 hour cookie before waiting to bake them all at 72 hours. I may have gotten a little baked myself while I waited for it to finish up. Then I got anxious waiting for it to cool off and decided to eat it with shadow puppets because I take baking very seriously. I think I’m going to sprinkle some flaky salt on a few tomorrow as it felt like it was missing something.

    Oh, man, is this the Cookie of 2024 recipe that’s on their front page at the moment? I saw it this morning and bookmarked it. I figure someone will eventually post it to social media. And here we are.

    I’m curious how the cookie tastes especially with a 72 hour hydration rest period. Longest I’ve gone is a 24 hour-ish hydration rest but that was for a cookie with dry whole milk and malted milk powder, which resulted in a delightful texture and flavor.

    I’ll have to push these to later in the year because I made chocolate chip (chunk) cookies a few weeks ago and I’m not int the mood to try more. Do you think these would be good with shaved chocolate or chocolate chunks in small pieces so chocolate chopped into pebble size versus chocolate chips? I don’t like how most chocolate chips even high end ones with cocoa butter don’t melt into the cookie like chocolate from a block would.

    People I gave them to liked them a lot. I did not care for them really and made smitten kitchen salted chocolate chunk ones to make up for it!
