Hi welcome to another tasty Tuesday on Christy’s A+ cooking today in is for New England recipes today’s featured recipe is New England clam chowder when our family lived in Vermont for 34 years we loved to go to Maine and eat the best clam Chow so I’m going to try to recreate it
Today I’ve already sauteed the bacon and left the grease and I chopped it up and now I’m going to show off my mandolin my pamper Chef mandolin to chop to dice the potatoes and then I’m going to scoop them back up and re chop them and you can see that I’ve already
Cut up five potatoes I use the Yukon Gold the recipe called for red or yukon gold and it makes about 2 and 1/2 [Applause] cups I just turned my instant pot on sauté and I’m going to add a half a cup of chopped onions in the bacon grease
That I had previously baked the made the B CH in and a half a cup of chopped celery and we’re just going to cook that until the onions are translucent the onions and celery are tender and I turned off my uh instant pot and I’m going to add two teaspoons of minced
Garlic one bay leaf and a half a teaspoon of thyme and salt and pepper to Taste and I’m just going to let that cook for a minute in the re residual heat from the instant pot the next thing we’re going to do is we’re going to add a cup and a half of chicken broth and an 8 oz jar of clam juice two cups of chopped
Clams and then we’ll add the Potatoes we’re ready for the last step I have poured out a cup and a half of half and half and half a cup more in my shaker bottle and I’m going to add A4 a cup of flour and I’ve turned the inster pot on sauté and I’m going to add the half and
Half and then I’m going to add the thickened half and half to the chowder and let it cook until it thickens up here is today’s recipe we like to serve our Chow with chopped bacon and fresh chives or green onions we also like to serve it with cornbread
