Hi all, I had lunch at [Maki&Ramen] in Edinburgh. Can someone find out the recipe? I would like to know which ingredients they use for the broth and how to cook it.

I mean a restaurant is not going to share their recipe, but it says what it is: a light miso broth.
Check out Ramen_Lord’s free e-book, it has a lot of information about ramen including recipes.

There could be so many different things used to make this bowl of ramen taste the way it does.
As mentioned already, take what you do know from the description, check out Ramen_lords ebook and the start trying to replicate it. Ask to buy just the broth from the restaurant so you can compare the flavor from theirs to yours.
