Sushi Inomata is known for jukusei – aging of neta to draw out flavor. The restaurant is quite a trek from central Tokyo, about 45-minute train ride to Kawaguchi. Inomata-san used top notch ingredients, tuna from Oma and Uni from Hokkaido. The meal was all nigiris – 18 pieces.
