Sweet Potato Mallow (Makes 12-16 Servings)

Ingredients:
-3 (29oz) cans sweet potatoes, drained
-3 egg yolks
-1 1/2 cups sour cream (368g)
-1/4 cup brown sugar (50g)
-1 1/2 teaspoons salt (9g)
-1/2 teaspoon ground cinnamon (1.38g)
-1/4 teaspoon ground ginger (0.5g)
-1/4 teaspoon ground nutmeg (0.5g)
-1/4 teaspoon ground allspice (0.5g)
-1/8 teaspoon ground cloves (0.25g)
-2 (10oz) bags marshmallows (566g)
