Originally was planning on making mjaddara (bulgur and lentils) but halfway through decided to add some tomatoes and omit the bulgur.

Sautéed cubed chicken breast and 2 bags of frozen mixed veggies (zucchini, squash, green beans, onions, peppers) in olive oil. Added a can of crushed tomatoes and simmered. Then added boiled lentils, mixed all together, and served. I seasoned with turmeric and kabsa spices (Arabic spice mix similar to masala) but you can use whatever you want.
