This is the first time I tried to fresh pack a lentil stew in jars. I followed I basic recipe, filled the jars with 1” gap, closed the lids hand tight and had them in the PC for 90 minutes at 15PSI.

Took them out & all are sealed, however they lost a lot of broth.

Where did I most likely make a mistake?

Thank for your help 😊

It looks like your stew ingredients expanded and caused liquid to syphon out of the jars.

On a side note, I read on this site often that there are not any approved recipes for canning lentils. I’m sure someone will correct me if I’m wrong.

Did you presoak/ boil your lentils? If not that could explain the big loss of liquid as they would have soaked up a ton of it while they cooked. The other cause for this would be siphoning, which is usually caused by the jars cooling too quickly though it can happen in the canner during processing as well. These jars are getting close to the 1/2 or more liquid missing rule for safety. I’d suggest freezing them personally, there’s a lot of liquid missing though they technically aren’t unsafe based on the pic it’s hard to tell and we can only see a couple of jars since many of them are in the back.
