Appreciate all the kindness from this sub. As a longtime lurker, just wanting to share my favs as I make them. Given the cold weather, here’s my rendition of Olive Garden’s Pasta E Fagioli. About a 45 min total process, all in one stock pot so not much cleaning up. This was $40 for 10 meals. $24 of the total $40 price was turkey, it could be much cheaper. You could use much less turkey, I am just a large man haha. Also, you could substitute turkey for Italian sausage and it would taste better. Also, when I get a little sick of it, I top with freshly grated Parmesan cheese! Just more fat/calories for either 🙂

    Ingredients:

    4 lbs 93/7 ground turkey (lots of flexibility here)

    1 cup dry Ditalini pasta (mini bow-ties work. Just small pasta)

    2 TBS olive oil

    1 TBS diced garlic

    1 onion, 3 carrots, 3 stalks celery (I just buy the precut to save time, not much pricier if buying just for the dish)

    16 oz tomato sauce

    16 oz diced tomatoes

    15 oz red kidney beans

    15 oz great northern beans

    3 cups chicken broth

    1 cup water

    1 tsp dry basil

    1 tsp dried oregano

    .75 tsp dried thyme

    Salt, pepper to taste

    Instructions:

    Bring water to a boil and cook the pasta. Strain and set to the side. Also, rinse the beans and set to the side while you have a break during the cooking process. These get added at the very end.

    Add 1 TBS oil to your stock pot and add the turkey. Season the turkey with salt and pepper. Brown the turkey, but do not fully cook. Strain and set to the side.

    Add remaining 1 TBS oil to stock pot and add celery, onion, carrots, and garlic. Sauté until translucent, but not fully cooked as well.

    Add turkey back, chicken stock, tomato sauce, diced tomatoes, water, and seasonings. Mix and bring to boil. Once at a boil, reduce to a simmer for 15 minutes or until veggies are tender. Taste and add seasonings to your liking.

    Once tender, add the beans and pasta and stir. You are now done 🙂

  3. Ooh! I have some spicy Italian sausage in the freezer that is delicious but I always hesitate to use because the fat content is insane. It would be perfect to add along side lean ground turkey!
