More or less this recipe below but I used Tomato Head brand tahini dressing instead of making from scratch. Roasted chickpeas instead of pumpkins seeds and an x large sweet potato instead of carrots. Pretty simple overall and delish!

    That looks really good! The substitution of the chickpeas was a smart choice because of the protein and fiber they have. If you didn’t this time, try roasting the chickpeas. Mix them with evoo and seasonings that would complement the rest of your ingredients. That’ll give you the crunch factor and another layer of flavor.
