I made this cucumber side salad with an oven baked salmon filet and it was so good I didn’t even want the salmon (and salmon is my favorite)

1 full English cucumber chopped
1 small shallot
About 3 tablespoons of chopped Italian parsley
About 10 kalamata olives chopped in half
Half a jar of grilled artichoke hearts these were in olive oil I tried to drain them as much as possible but the recipe I was kinda going off of called for a drizzle of olive oil so I admitted the olive oil since these added oil to the salad
1 whole red bell pepper that I roasted whole in my air fryer for about 9 mins at 400 chopped
A small sprinkle of feta cheese
A sprinkle of balsamic
And about 6 heirloom cherry tomatoes cut in 4ths (they were kinda big for cherry tomatoes)
Dried oregano and dried dill to taste
salt and pepper

This served 3 people with some leftovers but honestly I wanted to eat the whole bowl
