Massage salmon filets (2 at 4oz each) with 1 tablespoon of Dijon mustard and 1 tablespoon of honey. Mix together 1/4 c chopped walnuts, 1/4 c panko breadcrumbs, fresh thyme, salt and pepper, and press on top of the filets. Bake ~15 min at 425°.

I served with last night’s Greek potatoes, reheated in a frying pan with EVOO. Leafy salad and iced mint tea not pictured.
