I have been interested in learning to can, but the food safety concerns make me a bit hesitant to start (especially since I’m not really sure about what I’d want to can that I know I’ll use.)

I am interested in trying to can dried tomatoes packed with olive oil. But I remember reading elsewhere that canning things with oil could be problematic. Are there any tested safe methods for canning these, or maybe an alternate version? I want to make sure I approach this the right way!
