I usually like mine on top. But underneath is a nice change of pace. There’s a locally famous pizza shop in my city that puts the pepperoni under the cheese by default. But I think they’ll put it on top of you ask them to.

I’ve done this before and it’s nice because it allows the grease from the roni to seep into the sauce. Not floating aimlessly on top of the cheese

One of the key characteristics of a good pepperoni is the cupping and char it gets. This kinda blocks that from happening.

Next time try Pepperoni, then cheese, then sauce on top. I think it cooks the bottom of the pizza more.

I prefer my toppings on top of the cheese, but that is mainly so the cheese doesn’t just slide off. You do you bro, don’t let haters tell you your wrong for liking something different. People loose touch with reality in this sub when they see pineapple on pizza. I think it smacks.

Not usually a fan of pep under the cheese usually cause pizza places here use big pep and it just makes all the toppings and cheese slide off. Your pizza looks top notch

Something to think on: diced pepperoni under the cheese, optionally some on top. The dice keeps for a consistent flavor and texture throughout, and avoids the slippage problem another poster mentioned.

This is how I was taught at a chain pizza place. Not necessarily completely covered but cheese, pepperoni, light layer of cheese. The cheese helped keep the pepperoni and other toppings in place.

I think it depends on your pepperoni. My usual pepperoni gets nice n’ crispy on top of the cheese and I like it more that way so I stick to it. It being under the cheese doesn’t let it crisp as much.

if using anchovies, this is a must; on top of the cheese they become dried out hideous bitter corpses, but under they stay moist, the oil mingles with the sauce, and it makes it all so much better
*also break them up into smaller pieces, don’t use them whole
