Great low carb meal! Day 12/30 Casseroles!
Spinach Artichoke Chicken Casserole
2 chicken breasts (boneless/skinless) OR 2 cups cooked chicken or rotisserie chicken
1/2 onion, diced
2 cups spinach
14 ounce can artichoke hearts
16 ounces ricotta cheese
2 cups mozzarella cheese
1/4 cup sour cream
1/4 cup Parmesan cheese
1 tbsp olive oil
Salt and pepper to taste
1 tsp red pepper flakes (more or less to taste)
1 tbsp fresh parsley
2 tsp Italian seasoning
2 cloves garlic, minced
Preheat oven to 350° and spray a 9×13 baking dish with oil.
Add the olive oil to a pan over medium heat. Cut the chicken into bite sized pieces and add the chicken and onion to the pan. Season with salt and pepper to taste. Cook until the chicken is no longer pink. Add the chicken and onion to a large bowl.
To the bowl add the ricotta cheese, 1 cup mozzarella cheese, parmesan cheese, sour cream, spinach, artichokes, and the remaining seasonings including more salt and pepper.
Mix everything together and pour into the baking dish. Cover and bake 30 minutes.
Sprinkle the remaining 1 cup mozzarella cheese over the casserole and put back in the oven to melt the cheese.
Serve alone for a low carb meal, with extra veggies or salad and garlic bread, over rice, pasta, gnocchi or baked potatoes.
