Finally made it to Noma 2.0 after previous visits to 1.0 and the Sydney pop up. It was an amazing meal with so many inspiring and evocative flavours. My favourites were the whole langoustine with a caramel-y kelp butter and mussel broth on the side (the best opener I’ve had in any tasting menu), the sea urchin and hazelnut dish, raw squid served over a grilled koji cake and the scallop with sencha tea.

Once is never enough with Noma and I’m already lamenting the improbability of making it to the other seasons before they close. However one of our waitresses did make an interesting point about changes to their 3.0 timeline which may be of interest to people planning a visit. Firstly, that last year’s game season was the final one as they plan to do another pop-up in autumn. This will be announced in the next few months. Secondly, contrary to what was initially outlined, there’ll be another seafood season in 2025 before they travel again.
