I make variations of this kind of thing all the time (I’ll make two portions and save the second one for lunch the next day). But this one was especially tasty!
I don’t have a specific recipe since I just eyeball it, but it’s basically this:
– drain a can of chickpeas, toss in olive oil and salt/pepper/paprika, roast at 375F for 30-40 minutes
– finely chop cucumber, tomatoes, shallots, and parsley (or use whatever veggies you have on hand)
– prepare quinoa or other grain of choice
– the sauce is a roasted red pepper pesto – I bought it at trader joe’s but there’s plenty of similar recipes for this online!
– top quinoa with chickpeas, veggies, feta cheese, and pesto; add salt/pepper to taste

Looks awesome! Just don’t post any pics of chickpeas and salmon together in the same dish lol. Someone did that yesterday and got the smack down. Gatekeepers gonna gatekeep.
