Was super good! Rice, elote, chicken. My bowl looks a little sloppy, oops. But my family devoured it!

  1. I have like a million recipie cards that I need to toss, but this one I am keeping. It was so easy to cook, and soo good!

    Figuring out when to toss the corn into the chili mayo was the only tricky part, and I think I ended up cooking the corn for around 15 minutes before it had the right color. Then after adding the sauce with the chicken, I just let the liquid almost fully cook away.

    Also I went ahead and rougly chopped the cilantro leaves.

    But yeah, I could cook and eat this every day.
