Sticky Plum Tofu

  1. ###Ingredients

    * 3 spring onions, sliced (keep the green part for garnish)
    * 1/2 red pepper, sliced
    * 1/2 green pepper, sliced
    * 1/2 yellow pepper, sliced
    * 3 garlic cloves, minced
    * 3 plums, sliced

    **Sauce**

    * 2 tbsp tomato puree
    * 1 tbsp Shaoxing wine
    * 3 tbsp brown sugar
    * 2 tbsp sweet chili sauce
    * 2 tbsp dark soy sauce
    * 1 tsp chili flakes
    * 200ml pineapple juice

    **Tofu**

    * 1 block extra firm tofu 280g, cubed
    * 1 tbsp light soy sauce
    * 1/2 tsp white pepper
    * 1 tsp paprika
    * 2-3 tbsp cornflour

    ###Instructions

    1. In a container with a lid, add the tofu ingredients without the cornflour and allow to marinade for 10mins. Add the cornflour, cover and shake until all pieces are coated. Pop into the air fryer at 180ºc for 16mins.
    2. Add the sauce to a bowl and mix well. Set aside.
    3. Heat up a wok the add the spring onions, with peppers after 2-3 mins add the garlic, plums for another 2mins once the plums have soften add the sauce and mix well.
    4. Add the crispy tofu and coat in all the sauce. Serve up with some rice and enjoy!!
