Since transitioning to the med diet, Almonds have become a staple for me. I eat one serving for breakfast almost every day. I try not to eat TOO much because they are calorie dense!

I home roast them because it’s super cheap to buy 3 lbs of raw almonds at Costco and just roast them myself in weekly batches.

I put them in the oven for about 10 mins at 350F. I sprinkle olive oil and add a touch of salt at the end.
