I posted in this sub about our Geranium experience last night. I wrote that post disappointed by the Geranium experience. We had a reservation for Lupa, a more casual establishment in the Ark collection. I decided to cancel that booking and take a last minute reservation at Ark itself!
What a great decision!
A vegan and environmentally sustainable restaurant with a green Michelin star, I was blown away by the quality of flavour they delivered. Each course has something new to offer. I had the wine pairing which has a natural wine / orange wine slant with sustainability in the mix as well, my wife had the non-alcoholic pairing. Both were sublime. The wine pairing was really excellent. The 3rd course was a charred leak dish that I found a little lacking at first, but a sip of the carbon neutral Chenin blanc just brought it to life! That is what I want in a beverage pairing, food and beverage working synergistically to create an experience! It was really interesting to see the contrast in the non-alcoholic pairing. For the Japanese custard course, a very strong flavoured dish, I had a dry sherry-like orange wine (amazing) that almost amplified things and worked with the dish, revealing new flavours in the wine, while my wife had a much lighter and cleaner pairing that cut through the umami richness. Both pairings works and it was cool to see the difference!
Other interesting information, they have their own mushroom farm and they forage a lot of the ingredients! Nothing goes to waste, a lot of the cocktails etc… have elements from leftovers from dishes in other seasons.
Overall, a fantastic experience in a casual setting, the staff were fun and engaging, passionate about sustainable food and willing to make the meal a good experience.
I would recommend Ark to any of my friends visiting Copenhagen, I would not recommend Geranium! I think that says it all.
