I am not a dessert person and I was seldom
wowed by desserts at any fine dining restaurant. However, I have had some desserts that really stood out.
Here are some dishes that have left
an impression on me recently:
1. Carrot cake with crab roe (Sezanne): It’s
a brilliant idea to put crab roe into a carrot cake. It’s not too much so you won’t taste the carb roe but the fragrance makes the cake pretty unique and enchanting.
2. Hazelnut tart with white truffle (Sezanne):
I’ve never had a dessert with truffle. The tart itself is creamy and boring but adding a few slices of white truffle really brings the dish up to a different level both in smell and taste.
3. Chocolate tart with vanilla cream (Les
Amis): Great balance between the bitterness and sweetness of the chocolate. Though
the chocolate alone tastes a bit too much, the cream makes the perfect mixture and richness.
What’s your best dessert ever?

“Tangerine” from Belcanto in Lisbon will always be one of my favorites. A stunning exploration of citrus and technique. This was in 2016.
