1 cup cooked quinoa and brown rice blend
1 cup mixed vegetables
1/2 cup organic pinto beans
6 tablespoons salsa
1 tbsp extra virgin olive oil
Sauté vegetables in olive oil adding beans towards the end of the sauté
Serve over quinoa and brown rice
Top with salsa
