I just came back from a vacation where veggies were hard to come by. I came home wanting a big old salad and some actual leafy greens.

Tonight’s dinner is catching up.

The salad: radicchio, olives, fennel, blood orange, and navel orange in a lemon juice, citrus vinegar, and olive oil.

The main: air fryer salmon with baharat spice blend, quinoa with some chickpeas, mint, parsley, and lemon juice. And a little chard sautéed with garlic and pepper flakes.

The salad covers white, red, and orange veggies. With healthy fats.

The main has seafood, plant protein, greens, and whole grains.

    Nothing beats a blood orange and fennel salad.

    Any tips on air frying salmon without it getting dry? I’ve got some homemade baharat I’ve been looking for a reason to use.
