I have never heard of the top 3 listed chilies, since this isn’t a canning recipe can someone telling some alternatives I can use? Also if I can’t find the canned chipotle ones what could I use? Making this for a friend, and my knowledge of chilies is worse than nothing.

Ancho, guajillo and chile de arbol are dried chiles, you can generally find them in the Mexican section at your local grocery store, which is also where you’d find the canned chipotles. You can substitute other dried chiles for the ones in the recipe and chipotle powder or smoked paprika for the chipotles, but it’s not the same if you leave the chiles out
Do you live near a Latin market, they will 100% have all those chiles for under $7 and you’ll have enough for a few gallons of chili
