I got too many watermelon radishes. And maybe too many leaves this week: 2 kinds of radicchio, romaine lettuce, cucumber, fennel, and rainbow carrots. And my fruit drawer has apples and oranges.
Salad one: radicchio, romaine, fennel, radish, and orange. I used yuzu olive oil and champagne vinegar to dress.
Salad two: radicchio, romaine, cucumber, radish, and apple. I used a herbed olive oil, honey vinegar and lemon to dress. Topped with pumpkin seeds and pickled radishes I made.
Salad three: romaine, cucumber, tomato, radish, and white carrot. And this time it was a leftover mint parsley sumac dressing I made earlier in the week.

These look SO good! I have always wanted to try radicchio but it’s incredibly expensive at my store. $7.99/lb for some sad wilted ones ugh. Might treat myself to one because I have to try this!
