Quinoa chickpea patties:

1 cup cooked quinoa
1 can (15 oz) chickpeas, drained and rinsed
1 large egg
1/4 cup breadcrumbs (or as much as needed to combine)
1/4 cup finely chopped red onion
2 cloves garlic, minced
1/4 cup chopped fresh parsley
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
Olive oil for cooking

I mix up everything together in a big bowl, mash the chickpeas a bit with a potato masher, form to patties, and then pan fry in olive oil.

For the sauce it’s just Greek yogurt, lemon and whatever herbs you have. I used mint. It didn’t mix as well as it usually does because I only had nonfat Greek so I added some olive oil to the mixture.

Salmon cakes:

1 can canned salmon, drained and flaked
1 tablespoon mayonnaise (I use avocado oil mayo – hence close enough)
1 tablespoon Dijon mustard
1 large egg
1/4 cup breadcrumbs (or as much is needed)
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Olive oil for cooking

Same deal, mix, form and lightly pan fry in olive oil.

I use panko bread crumbs because that’s what I have so those are another thing that make it “close enough.”

The nut butter is Nuttzo Gingerbread – it’s all different seeds and nuts and flavored with spices not sugar.
