Grilled tuna steak, purple sweet potato, and wilted greens

  1. Albacore tuna steak seasoned with salt and heavy on the black pepper. Thrown on the grill until I deemed done, came out perfect with a little pink on the inside.

    Purple sweet potato, poked with a fork a bunch then thrown in the oven at 400F for about an hour. Cut in half then sprinkled with EVOO and pepper.

    For the greens, pan fried about 1/4 of a sliced onion in EVOO, then added 2 cloves of sliced garlic until golden, then added two big handfuls of mixed baby spinach and arugula. Salted to taste then added juice of a lime.

    I love this diet.
