I want to purchase a bulk amount of preserves from a restaurant store, but naturally will not be eating that much before it goes bad.
So, can I process it into smaller jars?

Not with canning. Restaurants and big companies can get more expensive machines that can kill pathogens that there is no way to replicate at home. Just opening them can introduce them to the product. I’d recommend getting the straight jars that are made for freezer jam and freezing them. Or freezing them flat in plastic bags to conserve space.
