I followed the Ball recipe for chicken stock. 10lbs (I have an induction stove and it settled on 11lbs if that means anything) for 25 minutes. The lids started popping like normal but then they all started popping back up… and then down again. When this occurred all the contents in the jar swished around like it was boiling. This went on for over twenty minutes but the lids ultimately stayed down. I’ve never had this happen. Any ideas what this could be?

This is normal! When the jar starts to form a little vacuum, it allows the water to boil at a lower temperature. The released gas then raises the pressure inside the jar again, and the boiling stops. This will repeat for a while until everything cools down sufficiently. As long as there’s no broth bubbling up and out of the jar, you should be fine! This is why it’s recommended to check the seals the next morning when they’re good and cool.
