I wanted to like this meal but I guess I set my expectations too high. Food was seasoned perfectly, service was top notch with knowledgeable staff but a couple things turned me off. Full disclosure the meal was $395 with alcoholic and non-alcoholic pairings included for my wife and I. With tax and gratuity it came out to around $1000.
1. A salad as an opener.
2. Course #2, 3 and 4 tasted very similar. Creamy with a savory element.
3. Timing : 9 courses and we were there for 4 hours. In-between bites dwell time was kind of long.
4. Mushy soup dumplings. The wrapper and filling had no texture.
5. We are still very new to wine pairings so it was hard to judge if it was proper to the course.
6. I unfolded #11 in order to see the meat. The bamboo was draped over initially.
Maybe a regular dinner night would’ve been better for us, showcasing more of Kato but our travel dates were locked in and couldn’t change much. Nothing but respect to Chef Jon Yao and the staff.

How was the dessert?
I’m very surprised to hear it took about 4 hours. I think our meal (last July) took maybe 2 to 2.5 hours and it was paced wonderfully.
